A sweetened and all spiced up pork and chicken adobo is another variation of the general native cuisine adobo. This native recipe caters well to those who prefer a subtle blend of sweet, sour, and spicy pork and chicken.
To cook this native cuisine, here are the ingredients we need: half a kilo of Pork Kasim chopped for adobo, half a kilo of fresh chicken chopped into serving pieces, four pieces of sliced hotdog, three tablespoons minced garlic, one tablespoon ground pepper corns, two tablespoons sugar, one piece laurel leaf, half cup of soy sauce, three-fourth cup of cane vinegar, 2 cups of boiled water, and a dozen hard quail eggs. With these ingredients ready, we’re all set to cook this native recipe.
To cook this native cuisine we first combine all ingredients in a saucepan (except the quail eggs and hotdogs). Then boil the mixture on high fire. On boiling, reduce the heat to a simmer and cover with the lid for some forty five minutes. Then, remove the lid cover and simmer again for some five minutes to reduce and thicken the sauce. Check the tenderness of the pork. If the meat and skin of the pork is tender enough, the rest of the ingredients should follow. Check also the sweetness and sourness of the sauce. Aim for a balanced sweet and sour flavor. Lessen the taste by adding a little water. Add to the taste by adding either more sugar or more vinegar. Finally, when everything is balanced, add the quail eggs and hotdogs for another two to three minutes. This native recipe serves 5 people.
This recipe is a favorite native cuisine in picnics and outdoor potlucks, as well as in elegant dinner meals for the family and guests. Because of the introduction of vinegar into this native recipe, sweet and sour pork and chicken adobo lasts longer than other native cuisine. Hence, it is suitable as a picnic viand for a packed dinner when traveling far to eat out. It goes well with sliced and salted tomatoes on the side, coupled with some sliced preserved eggs with chopped onions and tomatoes. This native recipe is also partnered with chopped green mangoes and onions with a dash of native preserved fish or “bagoong.”
Sweet and sour pork and chicken adobo is a popular native cuisine almost always present in every Filipino dinner table, at home or in native restaurants. It is one of the Filipinos’ culinary legacies.
The lion is universally considered as king of the jungle. How did this come about? A local folklore has this to say.
According to this folklore, one day all the animals in the forest were having fun. Actually, they were having a family outing. All of them, with their families and packed lunches, gathered in the forest for some games and food. The folklore says, the policy that day was that nobody would be hunted down to be eaten. They had to bring a packed lunch they had hunted the day before, the folklore says.
After the fun and food, they decided to sit down and talk about the forest they all loved. According to the folklore, they decided that it had to be protected, and that meant there had to be a leader among them who’d spearhead its protection and probably also lay down some policy to govern forest laws. So, the folklore says, they agreed to have an election for kingship. They decided that’s all they’d ever need---a king. They decided they would have no problem with an authoritarian monarch, the folklore adds.
Several animals were nominated to be the king. The folklore enumerates that nominated were the tiger, the leopard, the elephant, the lion, and many others who were deemed fearless and tough in the jungle. This election was chaired by the ape. Finally, the folklore says, the squirrels closed the nomination, and everybody was ready to vote. Just then, a question was raised. Chairman ape was asked if each candidate could display its physical power before the constituents. So the ape entertained a motion which was seconded by the body. But then, the folklore says, a terrible earthquake suddenly occurred. Big rocks came rolling down from the mountains, killing many animals.
When the earthquake stopped, the animals found chairman ape among the trapped animals. The folklore says the candidates tried rescuing the old animal but to no avail. The tiger was not strong enough, the leopard said he’d rather eat chairman ape, while the elephant was too big he might pin the ape to death. It was only the lion that was able to free the old animal unharmed using his strength and wit. When chairman ape recovered, he declared the lion king, and all the animals agreed.
This folklore explains how strength and wit placed the lion as the undisputed king of the forest---even nullifying the need for a democratic election.

I thought Dumaguete was a province in Mindanao. I was wrong. Dumaguete City is the capital of Negros Oriental which is in Region VII in Visayas.
I thought that Dumaguete was a far-fetched and uninhabited island. Wrong again! Dumaguete is just a ferry-ride away from bustling Cebu and it is even tagged as "The City of Gentle People".
History has it that its name came from the local word "daggit" which means "to snatch". Dumaguete has this powerful charm to attract visitors and keep them for good. Its beauty had lured pirates to frequently attack the coastal town.
Recently, Dumaguete was dubbed as "the most child-friendly city". That, for me, is a major asset. It is also known as a university town because of the many colleges and universities in this city which are open even for foreign students. And yes, business is booming in this area.
The tourism department of Dumaguete claims that this beautiful city is for the weary traveler, seeker of knowledge and nature lover, and the residents can speak English well and can understand Spanish.
That's probably why most tourists are Westerners and Europeans.
Dumaguete is for the people who long for water and land adventures.
There's a lot of beach resorts and dive sites there where you can also go dolphin and whale watching and scuba diving. If you're into conquering the heights and the caves, you'll be happy to learn that you are free to do spelunking and mountain trekking also.
But if your main objective of going there is to just chill and take in the view and relax, you can never run out of hotels to stay in and restaurants to dine in. You can request a tour guide from the tourism department if you want to go around the city.
What are the places that make this city famous? Since the inhabitants are dominantly Catholic, the St. Catherine of Alexandria Cathedral Park is considered a century-old landmark. That gives a religious aura.
The Bell Tower is the oldest city landmark; it has remained the city's watch tower since the Spanish times. The Siliman Veach is for the youth. It is where they unwind, especially on Sundays.
Rizal Boulevard is a seafront boulevard that has become the most popular promenade and jogging track for the health-conscious people. The rendezvous of most people there is the Quezon Park. It is lined with trees and it has a playground for kids.
With all the good things said about Dumaguete and the nice spots to visit there, it won't take long before it becomes a favorite among tourists. So let's go to Dumaguete!

Biak-na-Bato in San Miguel (de Mayumo), Bulacan is a town of caves. The name suggests a huge rock broken into several pieces or cracked into several openings. Spelunkers, cave tourists and other tourists will love this tourist spot that boasts of more than a hundred caves, complete with stalagmites, stalactites, spring waters, flora and fauna, the works.
Cave tourists don't have to be expert cave explorers or dwellers to look inside Biak-na-Bato. It’s been open to tourists as a national park since November 16, 1937 by Presidential Proclamation No. 223. It’s safe. Just go right in. Back then, the proclamation covered a total of 2,117 hectares spanning three barangays: Sibul and Biak-na-Bato in San Miguel, and Kalawakan in Trinidad. Today the tourist spot is limited to 659 hectares--all for cave tourists.
Going to this tourist spot is some two hours from Manila. Just hit the North Luzon Expressway (NLEX) in Balintawak, Quezon City and the road signs and directions along NLEX will take care of everything for the cave tourist.
There’s an easier route from SM City at North EDSA to San Miguel. Take an air-conditioned hired van (P 50 or a dollar) and sit back shoulder to shoulder with other passengers. From San Miguel, it will be an easy tricycle ride to the spot. In all, the travel will take one to one and half hours.
It is 1897. Emilio Aguinaldo, a young leader of the revolution and would-be president, retreats from Talisay, Batangas to the formidable cave fortress of Biak-na-Bato with 500 men. He finds the mountainous place abundant with streams, forests, rocks, and caves. Limestones like marble tea rose—nothing like it anywhere else and which will be very expensive a century hence—flourish.
There he puts up the short-lived Biak-na-Bato Republic. He was pressured by Spain to give up the quixotic struggle and his cavernous office, but Emilio is stubborn. Spain appoints Don Pedro Paterno to dissuade Emilio. Don Pedro frequented him in his cave headquarters. After five harrowing months, Emilio finally succumbs to a voluntary exile to Hongkong, with $800,000 (Mexican dollars) for him and his leaders.
Emilio signs the pact with Primo de Rivera, the walls of Bukal Cave, also called Aguinaldo Cave, as silent witness.
Today, there’s an arched bridge leading to the tourist spot, Biak-na-Bato National Park, for cave tourists to cross on—an enshrined connection to the glorious past of Bulacan. It is also a bridge that transports one to a scene a century ago when a nation was at the pains of birth.
Aside from seeing the diverse rock openings of this tourist spot in Biak-na-Bato, a visit can also be an experience for cave tourists in reminiscing the historic past of a struggling revolution, a republic, and its national leader.
The prospects of immigrating to the Philippines are encouraging, especially with the current developments both in the cities and the countryside. Immigrating is especially favorable at this time when economic and peace and order situation is predicted to improve in the next 10 years.
Some sectors speculate a major and sudden turn around of events for the Philippines in the near future. Many believe that a great political and economic restructuring are on the way resulting to positive reforms that will pave the way to more local and foreign investments in the country. Due to these investments, a lot of immigrating investors will flock to the country and boost further the tourism industry. In fact, even today, these positive immigrating activities are being felt initially.
Generally, the trend of most government initiated development is geared towards an improved tourism climate in the country. This thrust is aimed to encourage more foreigners to decide on immigrating to the country. It is believed that more foreign investments will trigger more immigrating activities, and vice versa. And this should goad the government to focus more on the general peace and order situation in the country.
The Philippines has lots of tourist and scenic attractions which are mostly located in the countryside. Aside from this, it has lots of potential sites for various industries and commercial businesses. The bullish aggressiveness of the real estate sector has provided new pathways into the hinterlands and along coasts for new saleable prime lands that immigrating people can consider for residence or investment.
In fact, one of the real estate trends today in the country is to provide a complete community within a given realty project site. Most condo communities really target immigrating individuals who are looking for secure and enclosed condo communities complete with posh recreation facilities, commercial and business areas, multi-purpose centers, and security, all in the perimeter of the classy community. Most times, these condo communities are located close to a commercial or business district, like the condo communities around Ortigas Center in Pasig, Metro Manila. Immigrating families can fully enjoy the peaceful surroundings of their immediate community, plus the accessibility of commercial and financial districts.
With these present developments and others being projected for the coming years, there is an anticipated influx of immigrating foreign nationals in the offing.
Immigrating to the Philippines at this time has never been this timely. This is the best time to start positioning for the great developments ahead.
There are times when you think that you cannot handle all the household chores that you’ve been dealing with on a daily basis. Don’t worry. You are not alone. Many people in the Philippines face the same difficulty everyday. But, this problem has an easy solution if you think about it.
Hiring a maid or household helper in the Philippines is the only way to ease your burdensome tasks at home. It is the perfect way to finding a quiet time for yourself and your family. Having a maid can help you be more productive at home, work and even in your leisure time. Hiring one in the Philippines cannot be considered a difficult task.
But, getting a maid requires you to take precautions, as well. Many have experienced unfortunate incidents when they started hiring maids. But, these things could be prevented if you know how to carefully handpick your maid. It isn’t bad at all if you require those who want to be your helper to undergo stringent screening process.
1. Find a credible person or agency in the Philippines that can recommend a trustworthy maid
The first step to finding a trustworthy maid is to find someone who has a reputable character that can assure that your potential maid is worthy of the job. Most people rely on the recommendation of their most trusted friends and family members before they hire a maid. Others ask for the help of agencies that recommend maids for them. Find an agency which is accredited by the Philippine authorities. Usually these agencies have conducted their own research on their maids to ensure the credibility of the household helpers.
2. Learn how to conduct background checks
A Philippine government-accredited agency has most likely conducted background checks on their maids. So, if you opt to ask for their help, you wouldn’t find it difficult to have a trustworthy helper. But, if you really prefer a maid who is handpicked by only you, then, it is time to learn how to conduct background checks. You can require your potential maid to present certificate from the Philippine National Police or clearance from the National Bureau of Investigation. This would ensure that your maid does not have any criminal record or pending cases.
3. Salary issue
As much as possible, brief your potential maid on the salary rate that you usually give them. If necessary, you can include their benefits if they remain loyal and trustworthy to you. In the Philippines, the salary range for maids is between P3,000 to P5,000 depending on the kind of work that they are required to fulfill.
